Quinoa Salad
INGREDIENTS:-
3 tablespoon cup quinoa
1/2 cucumber (chopped)
1 bell pepper (chopped)
1 onion (chopped)
30g beans
30g broccoli
1 tomato (chopped)
1 small carrot (diced)
Coriander leaves (for garnishing)
1/2 lemon
Salt
Black pepper
Garlic (optional)
METHOD:-
To cook quinoa -
Rinse the quinoa under running water. Take it in a large saucepan, add half a cup of water into it, and bring the mixture to a boil over medium-high heat, then decrease the heat maintain a gentle simmer.
Cook until the quinoa has absorbed all of the water. Remove from heat, cover, and let the quinoa rest for 10min, to give it time to fluff up.
In a serving bowl, combine the cucumber, bell pepper, onion, beans, broccoli, tomato, carrot, and coriander.
In a small bowl, combine the olive oil, lemon juice, garlic, and salt. Whisk until blended then set aside.
